I was going through my recipes today, pulling out ones I'll be taking along to Cape Cod for the summer.
I ran across this old favorite of my kids - good old comfort food! For some reason they loved it - Maybe because they used to "stack" the biscuits for me.
STACK-A-ROLL STROGANOFF
1 lb. ground beef
4 oz. can mushrooms, stems & pieces, drained
1 can French-fried onion rings (divide in half)
1 can mushroom soup
1/2 c. sour cream
1 pkg. refrig. Hungry Jack Flaky Buttermilk Buscuits
TOPPING: Mix together, blend well)
1/2 c. sour cream
1 egg, beaten
1/2 tsp. celery seed
1/2 tsp. salt
Brown ground beef, drain well. In 2 1/2 or 3 qt. deep ungreased casserole, combine beef, mushrooms and 1/2 can of the onion rings. Toss lightly.
Bring mushroom soup to a boil, remove from heat, blend in 1/2 c. sour cream, pour over the meat.
Cut biscuits in half to make 20 half circles. Stand these up, cut side down, around the outside edge of casserole.
Fill in with remaining onions, cover with topping.
Bake,uncovered, at 375 for 25-30 minutes or until nicely browned.
Add a salad, and you're all set!
