Recipe(tried): Stevia: Chocolate Sauce, a recipe

Hi, Vivian, I got this recipe verbally from an new acquaintance at the health food store. She never mentioned her name. Prepared as directed, I found it exceedingly sweet, but used it as a topping for an apple crisp that I made with oats, sgww flour, baking soda, pineapple juice, a few chopped figs, raisins and walnuts. (no sweetening in the crisp). It tasted great.

RECIPE AS TOLD:

STEVIA CHOCOLATE SAUCE

4 oz unsweetened baking chocolate
4 T Stevita Stevia
1-1/2 c. water
2 t vanilla
4 t arrowroot

Dissolve Stevia in water over low heat. Bring to a full boil. Scrape the chocolate into smaller pieces and add to the boiling water. Stir until the chocolate melts. Remove from heat. Stir in the vanilla. Make a paste of the arrowroot with 2 T water. Add to the chocolate and cook (stirring) until the sauce is thick.
This makes enough for 8 servings.

I purchased Stevita Stevia by mail order, and found the liquid drops at Cornucopia (HFS). I found an ms somewhere that sugar replacement = 1/3-1/4 t Stevita for 1 c sugar. No wonder my Chocolate Sauce was so sweet!!

Apparently the powder has to be activated by hot water. It didn't work when I attemped a pie with the powdered form.

I also used Stevia in a marinade for smoking beef -- vurry gude!!! -- just be sure to dissolve the powder in very hot water -- and then add the solution to your other ingredients.
