Recipe(tried): Stevia Oatmeal Apple Muffins...

Dear Dorsey,

Thank you for the recipe for chocolate sauce using stevia. I do not eat chocolate because of the caffeine but I will try to modify the recipe using carob in place of chocolate.

You say you are using the liquid extract for stevia. I have stevia in two forms, stevia powder, (powdered leaves) and stevia extract which is 200 to 300 times sweeter than sugar. Do you know how to us these products in the chocolate sauce?

I bought a book, entitled Stevia Rebaudiana Nature's Sweet Secret by David Richard. He list some recipes for using Stevia.

I only tried the Oatmeal Apple Muffins, I experiment with Stevia Powder, Stevia Extract and Apple Juice Concentrate. Of the three I like the Stevia Extract muffins the best. Stevia Powder muffins had a green tint to them, while the Apple Juice Concentrate were two moist. I also gave some to my chemistry teacher to sample. She liked all three kinds of muffins. When I get some money to buy the proper filters, (I am a student) I am going to try to make my own Stevia Extract from Stevia Powder. (Smile.) Let me know if you want any of the recipes listed above, since I will only print one recipe thatI have tried before. I will gladly print any other recipes you request at a later time, because I am only allowed 2 hour on the computer while on campus.

OATMEAL APPLE MUFFINS
(Sweetened with Stevia)
Makes 12 Muffins

1 C whole wheat flour
1 C rolled oats
1/2 tsp. salt
3 tsp. baking powder
1/2 tsp. nutmeg
2 tsp. cinnamon
1 1/2 tsp. Stevia Extract Powder
1 egg or 1 heaping Tbsp. soy flour plus 1 level Tbsp. water
3/4 C milk
1/4 C oil (1/4 cup applesauce)*
1 medium apple cored and medium chopped
3/4 C raisins

Preheat oven 400 degrees.
Mix first seven ingredients thoroughly.
In separate bowl mix remaining ingredients.
Gradually mix dry ingredients into moist ingredients.
Spoon into greased muffin tins.
Bake 15 to 20 minutes.

* I used applesauce in place of oil and neither of the recipes tasted overly sweet.

PS: Stevia Powder (Green) is 8 to 10 times sweeter than sugar. Replace 1 cup of sugar with 1 1/2 to 2 tablespoons of Stevia.**

Stevia Extract Powder (White) is 200 to 300 times sweeter than sugar. Replace one cup of sugar with approximately 1/4 tspoon of Stevia Extract.**

**Results may vary, depending on the brand and grade of the produce used.
