STIR-FRY PORK AND POTATOES
2 medium size potatoes
3/4 lb. stir-fry pork strips
5 tablespoons peanut oil
2 tablespoons sesame seeds
4 scallions, cut into 1-inch lengths
3 tablespoons soy sauce
2 teaspoons cornstarch
1 sweet red pepper, seeded and cut into strips
1 cup fresh or frozen snow peas
1 clove garlic, minced
1 teaspoon vinegar
I /2 teaspoon salt
Peel potatoes; slice into matchstick strips (2x1/8-inch). Cover with cold water; set aside.
Heat wok or large skillet over high heat; add 1 tablespoon oil. When oil is hot add sesame seeds; stir-fry for 1 minute until seeds are golden but not brown. Remove from pan.
In small bowl combine pork, sesame seeds, scallions, soy sauce and cornstarch; set aside.
Drain potatoes; pat dry. Heat 2 tablespoons oil; stir-fry potato strips for 2 minutes or until crisp-tender; remove from pan.
Heat 1 tablespoon oil; stir-fry red pepper, snow peas and garlic for 1 minute; remove from pan.
Heat remaining oil; stir-fry pork mixture for 2 minutes.
Add potatoes, vegetables mixture, vinegar and salt. Cook 2 to 3 minutes longer.
Makes 2 servings
