CHICKEN BREASTS WITH TOMATOES, GARLIC, AND SPINACH
1/4 cup of olive oil
1 tbsp chopped garlic
2 pounds boneless skinless chicken breast, sliced into strips or cubed
juice of two lemons or use the squeeze variety
1 (14 oz) can chopped tomatoes (i like the Hunts variety with the basil and garlic added)
BIG sprinkle of basil or Italian seasoning
1 bag fresh spinach
1 bag of shredded Italian cheese
In a large non-stick skillet, saute the olive oil and the garlic until the garlic is soft. (Open a bottle of Pinot Grigio while doing this, it will make the flavors smell even better...)
Add the chicken breast, and cook gently until the meat is cooked through, but not done completely.
Add the lemon juice and tomatoes. Stir well, and cook until all is hot and bubbly.
Toss in the Italian seasoning or basil. Turn the heat to medium-low, and add the spinach, cooking until it is wilted and steamy. Serve immediately.
Sprinkle the plate generously with the shredded Italian cheese, pour another glass of vino, and add some fresh Italian bread with REAL butter. You will never miss the pasta or the salad, trust me! Mangia!
