Recipe: Strawberry Freeze (using frozen strawberries and evaporated milk)

STRAWBERRY FREEZE

2 packages (10-ounces each) frozen strawberries (or sliced peaches)
1 (13-ounce) can evaporated skim milk
1/2 cup sifted powdered sugar

Set aside a few of the frozen strawberries or peach slices for garnish.

In a large mixer bowl break up the remaining frozen strawberries or peaches with a fork. Let stand a few minutes until fruit starts to thaw.

Add the milk and sugar. Beat with an electric mixer on low speed lust until mixture is blended. Beat on medium speed for 6 to 8 minutes or until mixture is thick and creamy.

Pour fruit mixture into a 12 x 7 1/2 x 2-inch pan. Freeze several hours or overnight.

TO SERVE:
Scoop frozen mixture into sherbet dishes. Garnish each serving with slices of reserved strawberries or the peach slices.

Makes 8 servings
