Recipe(tried): Chunky Chicken Mustard Salad

CHUNKY CHICKEN MUSTARD SALAD

FOR THE DRESSING:
1/4 cup red wine vinegar
1/3 cup prepared mustard
1 tablespoon Dijon mustard
1 garlic clove; minced
1/2 cup vegetable oil
1/4 teaspoon each salt and pepper
FOR THE SALAD:
4 cups diced cooked chicken breast
1 cucumber, unpeeled and diced
1/3 cup chopped red onion
2/3 cup chopped dill pickles
4 celery stalks, sliced
8 cups mixed salad greens

In a large bowl, combine vinegar, mustard, Dijon mustard, garlic, oil, salt and pepper. Mix well.

Add chicken, cucumber, red onion, pickles, and celery. Toss to coat with dressing. Refrigerate at least 2 hours.

Serve on salad greens.
