Strawberry Omelette

In a small bowl beat 2 eggs with mixer until light and fluffy.

Stir in:
1 tsp. powdered sugar
1 drop vanilla extract

Melt 1 tsp. margarine in a skillet.
Pour egg mixture in skillet.
Cover and cook 4 minutes.

FILLING
Mix together:
2 tbsp. sour cream
1/4 tsp. powdered sugar
pinch grated lemon or orange peel

Spread filling on omelet.
Remove to plate and fold in half.
Add sliced fresh strawberries on top.
Sprinkle with additional powdered sugar.
