I love Subway's Veggie Delight - you can buy theirs or make your own (this can also have cheese, etc.)

Soft Wheat bread (like a hero)
Shredded lettuce (lots)
Sliced tomatoes
Sliced black olives
Hot peppers :)
Sliced bell peppers
Sliced onions
"Mayonaise" (i make mine w/o)
Mustard
Oil
Vinegar
Black pepper
(cheese)

This works especially well if you make the ingredients ahead and just toss it together and go!
