Recipe: Sunday Brunch Casserole

Sunday Brunch Casserole
Serves: 8 to 10.

6 slices day-old white bread
margarine for spreading
2 cups shredded cheddar cheese
1 pound bulk pork sausage, cooked and drained
1/2 medium sweet red pepper, chopped (may use green pepper)
1/4 cup sliced green onion tops
3 eggs, beaten
1 can condensed cream of asparagus or celery soup, undiluted
2-1/4 cups milk
1/2 teaspoon Dijon mustard
1/4 teaspoon pepper

Remove and discard crusts from bread. Butter bread; cube, and place in greased 9x13x2-inch baking pan. Layer cheese, cooked sausage, red pepper, and onion in order given over bread. In separate bowl, beat eggs. Add soup, milk, and pepper. Pour over bread mixture. May cover and refrigerate overnight. Bake uncovered at 350 degrees for 35 to 40 minutes. Let stand for 5 minutes before serving.
