Recipe(tried): Sunday Dinner at Our House - Crocked Roast Beef with Gravy, Cheese Biscuits

Since it is "beginning to look a lot like Christmas," we had a hearty Sunday lunch. We had "Crocked" Roast Beef with Gravy, garlic smashed potatoes, cheese biscuits, green butterbeans, CLAUSSEN Pickles, sweet tea with lemon, and Cream Cheese Brownies.

CROCKED ROAST BEEF WITH GRAVY

3-4 lb. rump roast, rinsed
2 onions, sliced thinly
1 red bell pepper, sliced thinly
1 pkg. fresh mushrooms, washed and sliced thinly
1 can Campbell's French Onion Soup
1 can Swanson's Seasoned Beef Broth
1 Tbsp. flour
4 sprigs fresh rosemary
2 Tbsp. garlic
1/2 cup red wine
1 pkg. dry onion soup mix
black pepper

Place the flour in the bag and shake the flour around. Add the roast and then the vegetables. Sprinkle with rosemary, black pepper, and garlic. Mix the soup, the beef broth, the dry onion soup mix, and the red wine together and pour around the roast. Place the bag into a Crockpot. Cut 6 1" slits at the top of the bag. Cook for 4-5 hours on HIGH.

Before serving, remove the roast from the Crockpot and allow to rest before cutting. Place the roast on a plate. Strain the liquid from the roast and make gravy. I use 3-4 tablespoons of WONDRA Flour mixed with COLD water. Add this to 2 cups of liquid from the roast. Cook for 5-10 minutes. If the gravy is not thick enough, add more WONDRA Flour mixed with cold water. DO NOT ADD the flour to the hot liquids without the cold water. You will have a total mess!

CHEESE BISCUITS
YIELD: 8-9 biscuits

1/3 cup shortening (I used 5 1/3 Tablespoons of COLD butter)
2 cups self-rising flour
2/3-3/4 cup cold milk
1/2 cup grated cheese

Preheat oven to 450 degrees.
Put the flour into a food processor. Put the shortening (or the cold butter that has been cut into about 5 pieces)into the food processor with the flour. Using the pulse button, let the flour and butter blend. Pour 2/3 cup of cold milk into the flour mixture. Using the pulse button again, blend it all together until it looks like batter. If it appears dry, add some more cold milk. Remove the bowl from the food processor and add the cheese.

Line a cookie sheet with aluminum foil. Spray the aluminum foil with PAM. Drop the batter by a large spoon, leaving 2-inches between each biscuit. Bake for 10-12 minutes or until biscuits are golden brown.
