Recipe(tried): Sunday Dinner at Our House - Crocked Roast Turkey, Candied Yams
Menus Hi, everyone! We were at home this weekend because Kristin has a boot cast and is now able to make the long drive home.
She hasn't been at home since Sept. 29, so she was excited about coming home. She also wanted to come home to watch the Alabama-Auburn game with us.
We were all so excited because Alabama won! She and her roommate will be at the bookstore tomorrow to purchase commemorative t-shirts.
Today for lunch we had many of Kristin's favorites: "Crocked" Roast Turkey, Mamo's Dumplings, zipper cream peas, turnips with roots, candied yams, cranberry sauce, CLAUSSEN Pickles, sweet tea with lemon, and bread with butter.
I've posted most of the recipes here before except for the turkey. Usually, I only buy the turkey breast. However, there was a good sale on Honeysuckle whole turkeys so I bought one.
I am planning on using the leftover turkey in turkey noodle soup and turkey salad.
Here are the recipes that I haven't posted before.
CROCKED ROAST TURKEY
1 (10-12 lb.) whole turkey, rinsed and patted dry
2 apples
2 onions, sliced
3 stalks of celery, chopped
1 T. minced garlic
1 red bell pepper, sliced
Seasoned salt
1 cup white wine
garlic powder
black pepper
PAM Spray
1 T. flour
Preheat oven to 325 degrees.
In a large, turkey-size plastic cooking bag, place 1 T. flour and shake. Put the turkey on a large platter and stuff it loosely with the apples, onions, bell pepper, celery, and garlic. You will have some of this mixture left over.
Place the "left over" fruits and vegetables in the cooking bag. Place the turkey on top of the fruits and vegetables. Pour the white wine over the turkey. Spray the turkey with PAM and sprinkle with seasoned salt, garlic powder, and black pepper. Tie the bag with the plastic tie and put 6 1" holes in the top of the bag.
Place the cooking bag in a roasting pan and put in the oven.
Cook for 3 hours or until a meat thermometer registers 180 degrees.
CANDIED YAMS
2 cans Bruce's Yams with Orange Pineapple Sauce
Juice from one orange
1/2 cup brown sugar
1 T. butter
1/2 tsp. cinnamon
1/2 tsp. nutmeg
sprinkle of pumpkin pie spice
In a microwave-safe bowl, combine all of the ingredients together. Microwave for 15 minutes using 50 power.
