Recipe(tried): Sunday Dinner at our House - Grilled Sirloin Steak, Cheating Shrimp Scampi
Menus Today for lunch we had: grilled sirloin steak, Cheating Shrimp Scampi, rice, macaroni and cheese, broccoli salad, zipper cream peas, croissants (from Winn-Dixie!), CLAUSSEN Pickles, sweet tea with lemon, and Winn-Dixie cupcakes.
GRILLED SIRLOIN STEAK
1 large bottle of Hellman's Citrus Splash (I used Tangerine Balsamic)
2 T. minced garlic
1/4 cup soy sauce
1/4 cup orange juice
2 T. honey
2 sirloin steaks, about 1 pound each
Mix all of these ingredients together and place
in a large Zip-Loc Bag. Add the steaks and refrigerate overnight.
Prepare the grill. I used our Maverick Health Grill, but I'm sure that this can be made on the George Foreman Grill, too. Spray the grill with PAM. Remove the steaks from the marinade and discard the marinade. Place the steak onto the grill and grill until done.
CHEATING SHRIMP SCAMPI
2 lbs. jumbo shrimp, peeled, deveined, and washed
1 large bottle no-fat Italian salad dressing
1 T. minced garlic
2 T. butter
1 T. lemon juice
1-2 T. chopped green onions
In a 9X13" pan, spray with PAM. Arrange the shrimp in the pan making sure that none of the shrimp are touching. In a separate bowl, mix the Italian salad dressing, green onions, garlic, and lemon juice. Pour this over the shrimp. Dot with butter. Bake at 375 for 5-6 minutes or until shrimp are bright pink. The salad dressing mixture can be served over rice.
