VELVET VANILLA MUFFINS
2 cups flour
4 teaspoons baking powder
3 tablespoons sugar
1/4 teaspoon salt
3 eggs
1 cup milk
2/3 teaspoon vanilla
1/4 cup butter, melted
Preheat oven to 425 degrees F. Grease 12 muffin pan cups.
Sift dry ingredients together; set aside.
Beat milk, eggs and vanilla until light and foamy. Pour into dry ingredients and stir just until liquid is absorbed. Add melted butter and beat one minute. Fill prepared muffin cups two-thirds full.
Bake at 425 degrees about 20 minutes, or until delicately brown.
Makes 12 muffins
