Recipe(tried): Sunday Dinner at Our House - Marinated Sirloin Steak, Easy Oven Potatoes, Kathleen's Peach Pie (using crescent roll dough)

Hey, y'all!

The teachers started to school today so I spent all yesterday afternoon getting myself "prepared" to start a new year. It took so long for me to do that I didn't post our menu!

For Sunday dinner we had:

Marinated Sirloin Steak
Easy Oven Potatoes
Cream 40 Peas
Pickled beets, CLAUSSEN Pickles
Sweet Tea with Lemon
Garlic Toast
Kathleen's Peach Pie

MARINATED SIRLOIN STEAK

I put the sirloin steaks into the marinade early Sunday morning and cooked them using the George Foreman Grill.

MARINADE:
1 small onion, chopped
4 cloves garlic, minced
1/2 cup olive oil
1/2 cup vinegar
1/4 cup soy sauce
2 Tbsp. Dijon mustard
2 Tbsp. lime juice
1 Tbsp. lemon juice

Mix all of the ingredients together and pour into a large Zip-Loc Bag. Add the steaks and make sure that each piece is thoroughly coated. Place the bag in the refrigerator until ready to cook.

Preheat the grill and put on the steaks.

Grill for 8-10 minutes or until the steaks are done to your liking.


EASY OVEN POTATOES

2 lbs. red potatoes, washed, quartered, and patted dry
1/2 cup shredded cheese
1/2 cup ranch dressing (I used low-fat)
1/2 cup bacon bits
Salt and pepper
Parsley

Preheat oven to 350 degrees. Line a baking sheet with aluminum foil and spray with PAM.

In a large bowl, put the potatoes, cheese, ranch dressing, and bacon bits. Sprinkle with a little salt and pepper.

Cover the pan and place in the oven for 35-40 minutes. Take the pan out of the oven and remove the aluminum foil. Place the pan back into the oven and cook for 15-20 minutes more or until potatoes are done.

When ready to serve, sprinkle with parsley.


KATHLEEN'S PEACH PIE

1 pkg. refrigerated dough for crescent rolls
1/2 pkg. cream cheese, softened
3/4 cup sugar, divided use
1 Tbsp. vanilla extract
1 can peach pie filling (other pie filling may be used - blueberry, blackberry, cherry)
1/4 cup butter, softened
1 tsp. cinnamon

Preheat oven to 350 degrees. Spray a small baking dish with PAM.

Open the crescent roll package and remove 4 of the rolls. Put these rolls in the bottom of the dish.

Mix together the cream cheese, 1/2 cup sugar, and vanilla. Put this mixture on top of the rolls and make sure that all of the rolls are covered. Pour the pie filling on top of this mixture.

Unroll 4 of the remaining crescent rolls and place on top of the pie filling. Pat the top of the rolls with the butter, sprinkle on the remaining 1/4 cup sugar, and sprinkle on the cinnamon.

Bake in the oven for 25-30 minutes or until crescent rolls are done.
