Recipe(tried): Sunday Dinner at Our House - Sirloin Steak with Vegetables, Scallop Scampi
MenusADVERTISEMENT
Today for lunch we had "surf and turf." My husband wanted steak, and I wanted seafood so we compromised and had both! We had: baked sirloin steak with vegetables, scallop scampi, steamed shrimp (from Winn Dixie), loaded baked potatoes, onion rolls (from Publix), steamed broccoli, and sweet tea with lemon. For dessert, we had green, red, and purple seedless grapes.
SIRLOIN STEAK WITH VEGETABLES
1 sirloin steak--1 1/2-2 lbs.
1/2 cup white wine
1 can Progresso French Onion Soup
2 T. Dale's Marinade
1 red bell pepper, sliced thinly
1 onion, sliced thinly
2 tsps. minced garlic
1/2 of an eight-ounce package of sliced mushrooms
Spray a 9X13" pan with PAM. Place steak in the pan and top with vegetables. Mix wine, Dale's marinade, and onion soup together and pour over steak and vegetables. Cook for 1 1/2 hours at 350 degrees.
When steak has finished cooking, remove the meat from the pan and cut into serving portions. Place the vegetables and cooking liquid in a bowl and serve with the steak.
SCALLOP SCAMPI
1 lb. bay scallops
juice of one lemon
1/4 cup white wine
3 T. butter, melted
1 tsp. minced garlic
In a large skillet, melt butter on low heat. Add wine, lemon juice, and garlic. Saute until garlic is done. Add the scallops and cook for 4-5 minutes or until scallops are done.
Happy Monday!
