Sweet and Hot Sauce Stir Fry Sauce
rec.food.cooking/Pete Bellas/1992
This is our favorite. Typically you stir fry all the various ingredients with very little sauce and add this at the end, just before serving.
1 cup chicken broth
1/2 cup soy sauce
1/3 cup brown sugar
1/4 white wine (pale sherry is good)
1 clove garlic crushed
1 tsp toasted sesame seeds
4-5 dried cayenne peppers crumbled (or a tsp cayenne pepper ground)
1 tsp sesame oil
2 tbsp cornstarch dissolved in 1/4 cup water
Combine all ingredients except sesame oil and simmer for 10 minutes.
Add sesame oil at the simmer and slowly add the cornstarch mixture (add about half to start with) the sauce will turn cloudy white then clear brown, stir constantly. Some experimentation will tell you how much cornstarch mixture you need.
Can be added to the stir fry in the wok or can added at serving time (it's great of rice or noodles too).
