SWEET POTATO SOUFFLE
2 teaspoons sugar
1/2 teaspoon salt
2 tablespoons butter or margarine
1 cup milk, scalded
2 cups mashed cooked Louisiana Golden Yams
2 eggs, separated
1 teaspoon grated nutmeg
1 1/2 cups seedless raisins
1/2 cup chopped nuts
a few marshmallows
Add sugar, salt and butter to hot milk; stir until butter melts. Add mashed yams and egg yolks and beat well; add nutmeg, raisins, and nuts and mix thoroughly.
Beat egg whites until stiff and fold carefully into yam mixture. Pour mixture into greased casserole (1 quart), arrange marshmallows around edge of top.
Bake in a moderate oven (325 degrees F) about 1 hour.
Serve hot for dessert.
