Recipe: Golden Yam Waffles

GOLDEN YAM WAFFLES

1 cup sifted flour
1/2 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar
1/2 cup boiled mashed Louisiana Golden
2 eggs, well beaten
1 cup milk
1/4 cup melted shortening

Sift dry ingredients together.

Combine yams, eggs, milk and shortening; add to first mixture, stirring only enough to moisten.

Bake mixture on hot waffle iron and serve hot with butter or margarine and honey, or with hard sauce for dessert.

Makes 4 waffles
