1/2 cup sour cream (or plain yogurt)
2 tablespoons chutney
2 teaspoons curry powder
1/2 teaspoon salt
2 green onions, sliced thin
Prepare and boil potatoes.
While potatoes are cooking, heat remaining ingredients until hot (do not boil). Toss with potatoes.
*You can keep the potato skins neat-looking if you peel away a narrow band from around the middle of each potato before cooking.
