Recipe: Sweet Potato Soup

Misc.
Sweet Potato Soup

Butter 4 oz.
Garlic Gloves 3 pieces (chopped)
Onions 18 oz. (chopped)
Maple Syrup 4 tbsp.
Nutmeg 1/4 tbsp.
Star anise 3 pieces
Dark rum 2 cups
Sweet potatoes 2.5 pounds (cut into large rough dice)
Chix stock 5 quarts
Salt and pepper TT

Melt butter and sweat garlic and onions.

Add maple syrup, nutmeg, star anise and rum, and cook to release alcohol.

Add sweet potatoes and chix stock, and cook the potatoes until tender.

Remove star anise and puree contents with milkshake blender.

Correct seasoning with salt and pepper.
