2 pounds fresh yucca, peeled and cut into 1/4-x2 inch julienne strips
vegetable oil for frying
kosher salt to taste
Heat 2 inches of oil in a deep saucepan to 390 F. Fry yucca in batches for 30-45 seconds or until golden brown; transfer to paper towels to drain. Sprinkle with salt; serve immediately.
