ORANGE-CARROT COOKIES

2 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1/2 cup butter or regular margarine, softened
3/4 cup granulated sugar
1 egg
1 teaspoon vanilla
2 cups grated raw carrot
1/2 cup Grape Nuts cereal
FROSTING:
1 Tablespoon soft butter or margarine
2 cups sifted confectioners' sugar
1/3 cup orange juice
1 Tablespoon grated orange zest
Preheat oven to 350 degrees F. Lightly grease several cookie sheets.
Sift flour with baking powder, and salt; set aside.
In large bowl of electric mixer, at medium speed, cream shortening, butter, and granulated sugar until light and fluffy. Add egg and vanilla; mix well.
At low speed beat in flour mixture; then beat in grated carrot and the Grape Nuts, beating just until they're combined.
Drop by tablespoonfuls, 2 inches apart on prepared cookie sheets.
Bake 20 to 25 minutes, or until the cookies become golden-brown. Remove cookies to wire rack. Frost while they are still warm.
TO MAKE FROSTING:
In small bowl, cream butter and confectioners' sugar. Add orange juice and orange zest; mix well. Spread over cookies.
