Recipe: Sweet Potato Stuffed Oranges

My mom used to make these for Thanksgiving. There are dozens of recipes online you could use. Hers was one that included the orange juice strained from the pulp of the scooped out oranges, orange zest, and cinnamon and cloves.

What made them really special, was the fact that she only cut the top 1/3 of the oranges off. After scooping out the pulp, she would "pink" the edge (like this: /\/\/\/\/\/\ ). Then she would top the stuffed oranges with mini-marshmallows. They would melt together and be slightly browned after cooking.

The presentation was great, and so were the sweet potatoes!
