SWORDFISH STEAKS WITH LEMON BUTTER
Serves 6-8
8 swordfish steaks (8 oz each)
8 bacon slices
2/3 cup butter
3 crushed garlic cloves (I always use the mortar and pestle)
6 tb fresh lemon juice or Real Lemon
2 tb soy sauce
3 tb chopped parsley
salt and white pepper to taste
additional fresh parsley for garnish
Clean the swordfish steaks very well. Wash and pat dry. Reform the fish like a filet mignon and wrap the bacon with a toothpick around the outside edge, to form a steak. Melt the butter. Add all other ingredients to the butter and simmer. Grill the fish in a barbecue or grill, turning frequently and basting often with the lemon butter sauce. Cook 10 to 15 minutes, remove to serving platter and brush with the sauce. Garnish with the additional parsley and serve.
