Hi Sybil, It's me . This is my Aunt's recipe. I am not sure if it is what you are looking for. I am beginning to realize how similiar some Italian recipes are!

EASTER GRAIN PIE
FILLING: (Use with "Flaky Sweet Pastry")
3/4 Lb. soaked wheat 6 Egg yolks, beaten
1/2 cup scalded milk dash of cinnamom
1 tsp. salt rind of 1 Lemon, grated
1 tsp. sugar 1/2 tsp. orange extract
1 1/2 Lbs. Ricotta 1/4 cup citron and orange peel
1 1/2 cups sugar 4 Egg whites, beaten stiff
1 tsp. Vanilla
WHEAT MIXTURE: Let wheat stand overnight in a pot of water to soak, or (cover with 3 cups fresh water , 1 teaspoon salt and bring to boil 1 hour in covered pan) Drain soaked wheat. Add 1/2 cup scalded milk and 1 teaspoon sugar and boil for 5 minutes.
Remove from heat; add citron and orange peel; mix and allow to cool.

RICOTTA MIXTURE: Beat Ricotta and sugar together; add 6 beaten egg yolks, Vanilla, Cinnamon,Lemon,and Orange rind. Stir in prepared wheat and fold in Egg whites. Put in shell of Flaky Sweet Pastry. Bake at 350 degrees for 1 hour. Cool in oven.


FLAKY SWEET PASTRY :

2 cups sifted flour 1/4 cup butter
1/2 cup sugar 3 Egg yolks
pinch of salt 1 TBS. milk

Sift flour, salt and sugar; cut in butter. Stir in Egg yolks; mix eith wooden spoon. Work with hands until dough is manageable and clears bowl. Add milk to hold together. Knead until smooth. Chill 30 minutes. Divide into 2 balls. Roll out to form 1 (2 crust pie)
