MOKIES (MOCHA BROWNIES)
3/4 cup (1 1/2 sticks) butter or margarine
2 ounces unsweetened chocolate
3 tablespoons instant coffee
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1 cup semisweet chocolate chips
Preheat oven to 350 degrees F.
Carefully heat butter, chocolate and coffee in a small heavy-bottom pan over low heat, stirring until just melted and smooth. (Or microwave on high in an appropriate dish for 2 minutes or until butter is melted; then stir until chocolate is completely melted).
Transfer to a large mixing bowl and add sugar. Mix in eggs and vanilla until well blended. Stir in flour and baking powder and mix well; n fold in chocolate chips. Spread batter evenly in a greased 9-inch-square pan.
Bake for 35 minutes, or until a toothpick inserted in center comes out relatively clean (try not to stick it into a chocolate chip!)
Makes 16 (2-inch) squares.
