Recipe: Szechuan Beef

Diane, this sauce doesn't look like it would be sweet, but I'll post it anyway, along with two other sauces I found for Szechuan bean curd and pork. I think the method of cooking would be the same, just use different sauces. They look like they may be sweeter.

1 lb. rump steak cut into strips
2 T oil
1/2 dried chile pepper, crushed
4 T soy sauce
1/2 cup stock
2 T cornstarch
3 sticks celery, cut into strips
1 red pepper, cut into strips

Stir fry meat in oil, in batches if necessary for 2-3 minutes. Add crushed chili pepper. Mix soy sauce,stock and cornstarch, and pour over steak. Cook 2-3 minutes, Add veggies, and cook 1 min. more.
The recipe says to make sure to use a tender cut of beef.

Sauce #1
3 cloves garlic
1 piece gingerroot
2 T. dry sherry
3 green onions
1 1/4 cups stock or broth
2 T. cornstarch
2 T. Chinese chili sauce
1 T. sugar
3 T. soy sauce
1/2 t. freshly ground pepper
2 T. sesame oil

Sauce #2

1/2 cup sliced green onions
2 cloves garlic, crushed
2 slices fresh ginger root
4 T. Hoisin sauce
1 t. sugar
1/4 t. crushed red pepper
2 T. water
