Szechuan Noodles
My obsession for YEARS after I made it and lost the recipe (this is THE one from the L.A. Times years ago!!!)
1 lb. thin fettuccine, cooked
2 Tbsp. oil (this may not be needed)
1 cup julienned carrots, blanched (in boiling water)
1 cup julienned green onion
1 cup julienned cucumber
1 cup julienned red pepper
1/4 lb. julienned ham
1 cup bean sprouts
Dressing:
1 1/2 Tbsp. minced ginger
1 Tbsp. minced garlic
1 Tbsp. minced green onion
6 Tbsp. peanut butter
1 Tbsp. dark soy sauce
1/4 cup red wine vinegar
1 Tbsp. Chinese chile paste
1 tsp. sugar
2 Tbsp. vegetable oil
1 tsp. hot mustard
1/2 tsp. salt
1/2 cup chicken stock
Mix dressing ingredients
Toss all ingredients with dressing and serve at room temperature.
