Recipe(tried): Taco Casserole

Ellen, thanks, sounds great! Sounds like we like the same things. Here is a recipe for Taco casserole it is a variation on what you make. If you're like me, you like a change now and then. So here goes:

Taco Casserole
On the side I serve shredded lettuce and chopped tomatoes, maybe extra onions chopped up for onion lovers, some sour cream, and for those who want more heat, picante sauce and jalapenos.

1 medium bag Taco or Nacho flavored tortilla chips, crushed
1 1/2 lbs hamburger
1 pkg. taco seasoning
1 can cream of celery soup
1 can cream of mushroom soup
1 can Rotel tomatoes (spicy)
2-3 cups shredded cheddar cheese

Fry hamburger, drain, and add taco seasoning with a little water; simmer 5 minutes.

Mix soups and tomatoes together (do not dilute soups).

Spread half the chips in bottom of lightly greased 13x9-inch baking pan. Put a layer of the hamburger mixture on the chips, then a layer of the soup mixture. Cover with the cheese. Top with the last of the crushed chips Cover and bake at 350F for 20 minutes; uncover and bake 20 minutes longer.

To make ahead:
The chips turn to mush if you don't bake this right after assembling it, but what I do is bake it ahead, refrigerate it, then everyone heats up their serving in the microwave. The chips stay crunchy for a day or two after baking, maybe longer (I don't know as it gets devoured pretty quick around here, HA!)
