NOODLES WITH BREAD CRUMBS
"Pasta or noodles served with oil and bread crumbs is as traditional in Italy as pasta sauce with garlic. In some regions of Italy, bread for crumbs is toasted, then grated. In other regions, soft bread is made into crumbs. In this recipe, we use soft bread crumbs instead of toasted crumbs. Commercially prepared bread crumbs would not be suitable for this recipe."
8 oz. (4 cups) uncooked extra wide egg noodles
4 tablespoons butter or margarine, divided use
1 cup soft whole wheat bread crumbs
1/2 cup firmly chopped onion
1/2 teaspoon dried marjoram leaves
1/4 teaspoon salt
1/8 teaspoon pepper
Cook noodles to desired doneness as directed on package. Drain; keep warm.
Heat 3 tablespoons of the butter in medium skillet over medium-high heat. Add bread crumbs and onion; cook 3 to 5 minutes or until onion is crisp-tender, stirring constantly.
Stir in marjoram, salt, pepper, cooked egg noodles and remaining 1 tablespoon butter. Cook until thoroughly heated, stirring frequently.
Makes 5 servings (1 cup each)
