"Egg whites and lean ground beef trim the fat from this southwest-inspired favorite."
2 tablespoons corn oil
1 green pepper coarsely chopped
1 large onion, chopped
3 cloves garlic, minced
1 1/2 pounds lean ground beef*
2 egg whites
3/4 cup old-fashioned oats, uncooked
3/4 cup barbecue sauce, divided use
1 (4 oz) can chopped green chilies, undrained
Spray an "8 1/2 x 4 1/2 x 2 1/2-inch" loaf pan with cooking spray.
In large skillet heat corn oil over medium-high heat. Add green pepper, onion and garlic; stirring frequently, cook 4 minutes or until tender. Remove from heat; set aside.
In large bowl combine ground beef, egg whites, oats, 1/2 cup barbecue sauce and chilies. Stir in cooked green pepper mixture. Spoon into loaf pan.
Bake in 350 degree F oven for 1 hour. Drain excess liquid. Invert loaf onto serving platter. Spoon remaining 1/4 cup barbecue sauce
over top. Let stand 10 minutes before slicing.
*Use ground round or 90 percent lean ground beef
Makes 8 servings
