POLLO INKA'S AJI SAUCE
green lettuce (blend 7 or 8 leaves into blender)
3 tablespoons of mayonnaise
1/2 tablespoon of lime juice
cilantro 1/4 bundle (cut stems off)
4 Serrano peppers
1/8 teaspoon of salt
Note: adjust ingredients according to taste, spiciness and quantity.
I've been trying many different variations out there and when i saw this it made me think like a restauranteer. What i mean is the ingredients have to to be simple to maintain consistency and keep costs down to name a few. I've seen some out there the add green onions and garlic that is way too overpowering. The only thing I added was:
1. garlic powder to taste
2. saltine crackers (3 or 4)to thicken the sauce (be careful to add the salt at the end since these contain salt)
I learned the cracker trick from a Peruvian chef I saw use them in another spicy sauce he was blending. If you think, other sauce recipes do call for white bread as well.
Now if someone would just post their marinade for their rotisserie...
