Found this on Helen's Book of British Cooking. Obviously measurements are u.k but other recipes i've found have said use about 1 cup of mayo for tartar sauce. Still, when you're making it you'll be able to figure out what looks about right and just taste to test, that's half the fun!
NOTE - personally i prefer to use cornichons rather than gherkins (they are tiny gherkins) because i think they have a better flavour and texture but gherkins will do.
Makes 225 ml (8 fl oz)
Fresh tarragon - 1 tsp, chopped, or chives
Capers - 2 tsp, chopped
Gherkins - 2 tsp, chopped
Fresh parsley - 2 tsp, chopped
Lemon juice - 1 tbsp, or tarragon vinegar
Mayonnaise - 175 ml (6 fl oz)
METHOD
Mix all the ingredients together.
Allow to stand for at least 1 hour before serving, to allow the flavours to blend.
