Recipe: Tea Cake Cookies (using buttermilk)

TEA CAKE COOKIES

3 1/2 cups flour
3 teaspoons ground nutmeg
1 cup margarine, softened
2 cups sugar
2 eggs, beaten well
1/4 cup buttermilk
1/4 teaspoon baking soda

Sift flour and nutmeg together. Mix dry ingredients.

Cream margarine. Gradually add sugar and beat until light and fluffy. Add eggs.

Add baking soda to buttermilk, then blend thoroughly with the other creamed ingredients. Combine the dry ingredients and the creamed mixture. Mix thoroughly and chill for at least 30 minutes.

WHEN READY TO BAKE:
On a lightly floured board, roll dough 1/4- to 1/3-inch thick. Cut with cookie cutter or form small balls and flatten slightly. Place on cookie sheet.

Bake 10 to 12 minutes or until golden brown.
