Recipe: Technique for Thin Pizza Crust

Trick to Make Thin Pizza Crust

1 batch pizza dough

Make your usual pizza crust.

While the crust is rising, preheat the oven to 500 degrees and put in a "pizza stone".

Punch down the crust and roll it out fairly thin. Put some cornmeal on the bottom of a round pizza pan and lay the crust on top.

Put the crust in the oven and this is the KEY to the thin crust -- turn the "pizza stone" upside down and place it over the crust on top of the pizza pan. Bake like this for 2-3 minutes. (The pizza stone on top of the crust does not allow it to rise).

Remove the pizza stone. Take the pizza out of the oven and top with anything you want.

Return to oven in the pizza pan (without the stone) and bake for another 8-10 minutes.
