Recipe: Texas Tuna Burgers with Jalapeno Mayonnaise (serves 2)
SandwichesTEXAS TUNA BURGERS WITH JALAPENO MAYONNAISE
FOR THE JALAPENO MAYONNAISE:
1 medium jalapeno pepper, seeded
2 tablespoons reduced-fat mayonnaise
FOR THE TUNA BURGERS:
6 ounces fresh tuna, coarsely chopped
2 scallions, sliced (about 3?4 cup)
1/4 cup chopped onion
Salt and freshly ground black pepper
Olive oil cooking spray
FOR SERVING:
2 whole wheat hamburger rolls
1 small tomato, sliced
2 romaine lettuce leaves
TO MAKE THE JALAPENO MAYONNAISE:
In food processor, chop jalapeno. Transfer pepper to small bowl. Mix with mayonnaise. Set aside.
TO PREPARE THE BURGERS:
Without washing processor bowl, add tuna, scallions and onion. Pulse several times to finely chop ingredients. Season with salt and pepper. Using hands, form tuna mixture into 2 patties about 4 inches around and 1/2-inch thick.
Coat medium nonstick skillet with olive oil cooking spray. Heat skillet over medium-high heat. Cook burgers for 2 minutes per side.
TO SERVE:
Set each burger on bottom half of a hamburger roll. Top each with slices of tomato and lettuce leaf. Spread mayonnaise on top half of burger bun. Set over burger.
SERVING NOTE:
To give this burger an even healthier profile, consider piling on the vegetables, which add few calories. Try slices of roasted red pepper, sprouts, additional leafy greens, sliced red onion and mushrooms.
Makes 2 servings
