Recipe: Ham and Swiss Pie

HAM AND SWISS PIE

1 tube Ritz crackers
1/2 stick plus 1 Tablespoon softened butter, divided use
1/2 cup chopped onion
2 eggs, slightly beaten
3/4 cup sour cream
dash pepper
1 cup shredded Swiss cheese
1/2 cup chopped ham or 6 slices crumbled cooked bacon
1/2 cup shredded Cheddar cheese

Preheat oven to 375 degrees F.

In a ziplock bag, crush Ritz crackers. Dump into a bowl.

Mix in the 1/2 stick of softened butter. Press mixture into a pie pan and set aside.

In saute pan, saute the onion in the remaining tablespoon of softened butter until translucent.

Combine in a bowl with the slightly beaten eggs, sour cream, pepper, Swiss cheese and ham or bacon.

Pour into the reserved pie crust. Top with Cheddar cheese.

Bake for 30 minutes. Let set 5 minutes before serving.
