My DH and I made this wonderful meal for dinner last evening and it was just great. DH made mashed potatoes with it as he needed some carbs to soak up his insulin (DH is diabetic). This recipe made just enough for two and it was thoroughly enjoyed by both of us! Thanks Gina.
