Recipe: Toasted Angel Cake with Berry Sauce (grilled)

TOASTED ANGEL CAKE WITH BERRIES

"The following recipe is a light and easy red, white, and blue celebration of color and taste."

7 to 8 ounces angel cake (package of baked)
1 1/2 cups blueberries, washed, picked over
1 1/3 cups raspberries, washed, picked over
1/4 cup sugar (or to taste)
2 tablespoons dry white wine (OR orange juice)
1 tablespoon grated orange peel
Frozen strawberry or vanilla yogurt (optional, for serving)

Slice cake (1 slice per serving) and have it ready at the grill .

Put the blueberries, raspberries, sugar, wine, and orange peel in small saucepan. Simmer sauce about 6 minutes, stirring occasionally. Serve warm or cold.

Place sprayed grill rack on grid over ashen-hot coals. Toast cake slices and place on dessert plates.

Drizzle stewed fruit over cake. You can serve this dish with frozen strawberry or vanilla yogurt on the side.

Makes 4 servings
