Recipe: Tomato Pie

Breakfast and Brunch
Tomato Pie

1 baked pie shell
5 large Roma tomatoes, sliced*
1/2 cup mayonnaise
1/2 cup Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 cup Ritz crackers, crumbled
1 clove garlic, chopped

Sauce:
Mix together garlic, mayonnaise, cheese, salt and pepper.

Layer tomatoes into baked pie shell in pie pan and spread part of the sauce mix on top of tomatoes. Repeat layers of tomatoes covered with sauce. Dot top with butter and spread cracker crumbs on top.

Bake 30 minutes at 350 degrees. After first 15 minutes, cover with foil tent to prevent burning during last 15 minutes.

*Roma tomatoes preferred because of decreased juice content. Regular tomatoes may be used by removing seeds and juice.

Makes 8 servings
