Tom's Cranberry-Corn Bread Stuffing

...an EXCELLENT stuffing which is made from Italian sausage, fresh cranberries, cornbread and apples.
It has become quite the family tradition in our household.
Servings: 8
4 cups cranberries
1 cup water
1 1/2 cups sugar
1 pound sausage -- cooked and crumbled
1 large apple -- unpeeled and chopped
1/2 cup diced green pepper
1/2 teaspoon thyme
1/2 teaspoon marjoram
1/2 teaspoon sage
9 cups crumbled corn bread
1 cup diced celery
1 small onion -- chopped
Preheat oven to 350 degrees. In saucepan; combine cranberries, water and sugar. Bring to a boil, simmer 10 minutes, or until berries are tender. Drain off juice. Combine drained berries with remaining ingredients. Turn into a greased casserole and bake 1 hour, or use to stuff a turkey.
