Recipe(tried): Tonights Dinner....Comfort foods! Salisbury Steak, Creamy Mashed Potatoes

Tonight I will have good-old fashioned comfort foods that include; Salisbury Steak, Creamy Mashed Potatoes, petite Lima Beans and yeast rolls eith butter.

Salisbury Steak

1 can cream of mushroom soup
1 tbsp. prepared mustard
2 tsp. Worcestershire sauce
1 tsp. prepared horseradish
1 egg, lightly beatened
1/4 cup dry bread crumbs
1/4 cup minced onion
1/2 tsp. salt
dash of black pepper
1-1/2 lbs. ground round
1-2 tbsp. cooking oil
1/2 cup water
fresh parsley, chopped(2 tbsp.)

In a bowl, combine the mushroom soup, mustard, Worcestershire sauce and horseradish. Measure out 1/4 cup. Add to a bowl with the egg, bread crumbs, onion, salt, pepper and ground round. Mix well and shape into patties. Brown in oil in a large skillet and drain off the oil.Combine the remaining soup mixture with the water and pour over patties. Sprinkle with the parsley and cover with a lid. Let cook and simmer on low heat until done.

Creamy Mashed Potatoes

4 lbs. potatoes, peeled and quartered
1/4 cup butter or margarine
1 oz. cream cheese, softened
evaporated milk(1/3-2/3 cup)
salt and pepper to taste

Cook potatoes in boiling salted water until tender;drain. Add butter and cream cheese and the milk. Whip with an electric mixer on low speed or mash with a potato masher. Add the milk in as needed to make potatoes light and fluffy. Season with salt and pepper.

Hope everyone is enjoying this Fall weather as much as I am. It is a rainy day here and a perfect day to stay in and cook! In response to Gina's signature dish....I don't think I have a specific one. Everybody in my family likes something different that I fix! My dad likes my meatloaf and my desserts, My brothers like my roast, chicken and dressing and my chili and my dear husband likes everything I cook! I have a love for cooking and sharing recipes! I guess that is why I enjoy this website so much! Happy eating and cooking everyone!
