Recipe(tried): Tonight's Dinner: New York Strip Steak, Herbed Potatoes, Marinated Tomato Slices, Grilled Garlic Bread

Hi Everyone! The steak was charcoaled on the grill. We had Herbed Potatoes on the grill, corn on the cob, marinated tomato slices & grilled garlic bread. For dessert Strawberry Shortcake w/vanilla ice cream.

Herbed Potatoes
6 servings

1/4 cup finely chopped celery
3/4 cup butter,melted
1 tsp. dried whole oregano
1/2 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. pepper
6 medium sized baking potatoes,unpeeled
1 medium onion,thinly sliced

Saute celery in butter in small saucepan till tender. Stir in oregano, salt, garlic powder, and pepper. Remove from heat and keep warm.

Wash potatoes (at this point you can speed up the cooking process by putting them in the microwave for 10 minutes) cut each into 1/2-inch slices; cutting to, but not through the bottom peel. Place a slice of onion between each slice of potato. Place each potato on a square of heavy duty aluminum foil; drizzle about 2 Tbsp. butter mixture over each. Fold foil edges over and wrap securely. Grill foil-wrapped potatoes over medium coals 1 hour (takes less than an hour to cook if you microwaved them), or till done.

Marinated Tomato Slices
6 servings

4 tomatoes, sliced
1 onion, thinly sliced
1 cup olive oil
1/3 cup red wine vinegar
1/8 tsp. garlic powder
salt and freshly ground black pepper to taste
Lettuce leaves (optonal)

Arrange tomato and onion slices in a large shallow container. Combine oil, vinegar and garlic powder, stirring well; pour over tomato and onion. Sprinkle with salt and pepper. Cover and refrigerate at least 1 hour. Serve over letuce leaves if desired.

Grilled Garlic Bread
8 servings

2 Tbsp. plus 3 tsp. butter, softened
1 tsp. garlic powder
1 loaf (16 oz.) French bread

Combine butter and garlic powder in small bowl and stir till blended. Cut french bread into 16 slices and spread each slice with butter mixture.

Grill bread slices over medium coals 2 minutes or till golden brown. Turn over and grill an additional 2 minutes or till golden brown. Serve hot.
