TORTILLA PIE
2 tbsp. salad oil
1 medium sized onion
1 medium sized green peppers
2 whole large skinless, boneless chicken breasts, cut in 1/2 inch pieces
1/2 tsp. chili powder
1 (8 oz.) bottle mild or hot taco sauce
3 tbsp. drained, chopped canned green chilies
3 (7 to 8 inch) flour tortillas
1/4 lb. Monterey Jack cheese, shredded (1 cup)
1/2 small head iceberg lettuce, thinly sliced
In 12 inch skillet over medium heat, in hot salad oil, cook onion and green pepper 5 minutes, stirring occasionally.
Increase heat to medium high, add chicken and chili powder; cook 5 minutes, stirring frequently.
Add taco sauce and green chilies; heat to boiling. Reduce heat to low; simmer 10 minutes, stirring mixture occasionally. Add salt to taste.
Preheat oven to 350 degrees F.
Place tortillas on cookie sheet; bake 5 minutes until crisp.
TO ASSEMBLE:
On same cookie sheet on 1 tortilla, place one third chicken mixture and one third cheese. Repeat layering 2 times.
Bake 10 minutes or until cheese melts and filling is hot.
TO SERVE:
Place stack on platter with lettuce. Cut into wedges to serve.
Make 4 servings
