I have never heard of using spinach in TORTILLA Soup --- only in TORTELLINI Soup. Here are 2 tortilla soup recipes -- if you meant tortellini, just let me know!

Easy Tortilla Soup
(Better Homes & Gardens Test Kitchens)

(My married kids call this "Hurry-Up Tortilla Soup" because it's so easy to make for their hungry young ones!)

2 14 oz. cans Mexican Style stewed tomatoes, undrained
1 12 oz. can corn with green & red peppers, drained
1/2 c. water or chicken broth
1/2 package taco seasoning mix (2 T.)
Freshly fried cirn tortilla strips OR crushed taco chips
1 c. shredded cheddar or jack cheese

Combine tomatoes, corn, water (or broth) and taco seasoning mix in 2 quart saucepan. Bring to a boil and simmer a couple of minutes. Spoon into 4 soup bowls and top with chips and cheese. Let stand about 5 minutes before serving so cheese starts to melt.

Chicken Tortilla Soup

(From "365 easy One Dish Meals")

3 T. corn oil
6 corn tortillas, sliced in strips
2 green bell peppers, chopped
1 red bell pepper, chopped
4 carrots, peeled and sliced
1 medium onion, chopped
2 cloves garlic, minced
3 skinless, boneless, chicken breast halves, cut in strips
3 large tomatoes, peeled, seeded and chopped
(can substitute 1 14oz can redi-cut tomatoes, drained)
1 1/2 t. ground cumin
1 1/2c. frozen corn kernels
6 c. chicken broth
Juice of 1 lime
1 1/2 c. shredded Monterey Jack cheese

Heat 2 T. oil in 5 quart Dutch oven over medium high heat. When hot, add tortilla strips and cook, stirring until strips are golden brown. Remove with slotted spoon and drain on paper towels.

Add remaining 1 T. oil to pot. Add peppers, carrots, onion, garlic and chicken. Cook, stirring often, until onion is soft and chicken is cooked through (4-6 minutes). Add tomatoes, reduce heat to medium, and cook, stirring occasionally, 5 minutes. Add cumin, corn and broth. Heat to boiling, reduce heat to low and simmer, uncovered 10 minutes. Stir in lime juice.

Divide tortilla strips and cheeseinto 6 soup bowls. Ladle hot soup over cheese.
Yummy.
