Recipe: Turkey Bayou Burgers

TURKEY BAYOU BURGERS

1 lb ground turkey
2 scallions (3-inches of green left on), thinly sliced
1 red bell pepper, cored, seeded and finely chopped
1 tsp minced garlic
2 tbsp chopped cilantro
3/4 tsp dried thyme
1/2 tsp ground cumin
1/2 tsp paprika
red pepper flakes (to taste)
salt and ground black pepper (to taste)
4 toasted hamburger buns
1/4 cup regular or reduced-calorie mayonnaise-type dressing, for garnish (optional)
1 small ripe avocado, sliced, for garnish (optional)

Prepare hot coals for grilling.

Place the ground turkey in a bowl and mix well with the scallions, bell pepper, garlic, cilantro and spices. Season to taste with salt and pepper. (Pre-cook a small amount in a skillet or microwave to taste and adjust seasoning.) Gently form into 4 patties.

Grill patties over hot coals, 3-inches from heat, for about 5-6 minutes per side.

If desired, spread buns with mayonnaise-type dressing and top burgers with avocado slices. Serve immediately.
