Recipe: Beef and Cabbage Joes (sloppy Joes)

BEEF AND CABBAGE JOES

1 lb ground beef
1/2 cup onion, chopped (1 medium)
1/2 cup thinly sliced celery
2 cups shredded cabbage
1/3 cup chopped green bell pepper
3/4 cup catsup
1/4 cup water
1 tablespoon prepared mustard
1/4 teaspoon salt
8 hamburger buns, split and toasted

Cook and stir the meat, onion and celery in a large skillet until the meat is brown.

Drain off the excess fat. Stir in the cabbage, green pepper, catsup, 1/4 cup water, mustard and salt; heat to boiling, stirring occasionally. Reduce the heat; cover and simmer until the vegetables are tender, about 25 minutes.

Spoon the mixture onto the bottom halves of the buns and top with the remaining halves.

VARIATION:
For Sloppy Joes, omit the cabbage and salt.
