Recipe(tried): Turkey Panini and Turkey Soup Claudette - Some Delicious Leftovers...

Sorry I have been remiss in posting this sooner but my 3 grandchildren were here and we were playing and having a good ol' time! I hope your holiday dinner was as delicious as ours and that you all enjoyed it!
One of the first things I did after slicing up the rest of the turkey breast was to get a casserole dish out. I layered the bottom with any left over stuffing that had fallen out, all the drippings, meat off the bone, carrots that were under the turkey, peas, corn, some of the sweet potato casserole, and then I topped it off with the mashed potatoes. Sort of like a Shepherd's Pie but really Thanksgiving in a Bowl! I put that away for Saturday's meal anda served it alongside some re-heated gravy, leftover corn casserole and cranberry sauce.
Now for the Panini and soup recipes. We enjoyed the Panini Sandwiches on Friday and Saturday for lunch and the soup for Friday evening. It was all delicious!!
TURKEY PANINI
serves 4
4 soft sourdough bread rolls
olive oil
1/4 - 1/2 c. cranberry relish or chutney
fresh baby spinach leaves
slices of turkey breast
2 oz. sliced ham
slices of provolone cheese
Split rolls horizontally. Lightly brush each side with olive oil. Spread cranberry chutney or sauce on one half, layer with spinach, meats and cheese. Place sandwiches on grill and cook until cheese is melted.
TURKEY SOUP
serves 6
1 meaty turkey carcass
4 c. water
4 c. chicken or turkey stock
2 cloves garlic, crushed
1 large onion quartered
1/2 t. salt
chopped cooked turkey
1/4 c. sun-dried tomatoes strips, drained and cut into thin strips
1 1/2 t. dried Italian seasonings
1/4 t. black pepper
3 c. leftover veggies such as corn, peas or carrots
1 1/2 c. pasta such as rotini or penne or shells
1 15 oz. can of Great Northern beans, rinsed and drained
grated parmesan
Break the carcass in half and place in a large pot.Add water broth, onion, garlic and salt and bring to a boil. Reduce heat and cover...simmer for 1 1/2 hours.
Remove turkey bones, cool, cut meat off the bones,coursely chop meat. Add enough turkey back to the pot to equal2 cups. Set aside. Discard bones. Strain broth; skim off fat.
Return broth to pot, stir in tomatoes, seasonings and pepper. Stir in veggies. Returnto boil, reduce heat, cover and simmer for 5 minutes. Add pasta. Simmer uncovered for 8-10 minutes or until pasta is done. Stir in turkey and beans, heat thru. Serve with grated parmesan cheese.
I'm off now to enjoy a slice of that Awesome Coconut Cake (very well named!) and a cup of coffee....
