Turkey Rice Salad
1/4 cup oil
2 Tbsp. apple cider vinegar
1 1/2 tsp. lemon juice
2 tsp. dijon mustard
2 10-oz. pkgs. frozen white and wild rice blends, thawed
2 cups cubed cooked turkey
1 cup pea pods, cut in half
1 chopped red bell pepper
2 chopped green onions
1/2 cup chopped toasted walnuts
1 avocado, peeled and cubed
Combine oil, vinegar, lemon juice and mustard in medium bowl and whisk vigorously to combine. Add remaining ingredients except walnuts and avocado, to dressing in bowl. Toss gently to coat, then cover and refrigerate 1-2 hours. Add walnuts and avocado just before serving. 4 servings
